Berner Hobelkäse AOP is the product of the rigourous selection of the best Berner Alpkäse cheeses. After 6 months in the cellar, these cheeses are dried upright in a rack for 12 more months. This method originates from the ancient custom of preserving foodstuffs by drying.
The result? A cheese with a unique flavour, to be eaten in wafer-thin curls.
Traditionally, this extra-hard cheese is cut using a cheese shaver to produce wafer-thin curls; the cheese takes its name from the German word "Hobel" meaning "cheese shaver".
